Colour, taken as a whole
A good lot is one shade. Seed visibly mixing black and brown is two harvests or two fields combined.

Fullness, felt in the hand
Plump seed has a slight give. Flat seed set poorly and yields little when pressed.

Bite
Properly dried seed snaps between the teeth. Anything that chews rather than breaks is still holding moisture.

The bowl of water
A handful dropped in separates in seconds. Sound seed sinks; hollow or insect-damaged seed floats.
